Gluten Free Mozzarella & Tomato Salad

Fresh Mozzarella with fresh tomatoes? What a treat. You can do all kinds of things with this base recipe by adding slices of ham or salami or black olives or whatever comes to mind.  It is a refreshing salad and very much enjoyed.

Mozzarella tomato salad recipe

Layer cheese, tomatoes, basil and onions alternately on one large serving plate.

Premix oil and vinegar w/salt & pepper.

Pour dressing over salad turning salad so that all is coated.

Proportion to two separate serving plates or bowls.

  • 1/2 cup melted butter
  • 4 ounces melted german chocolate
  • 1 cup organic sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup Pamela’s Baking & Pancake Mix
Preheat oven to 350°. Melt chocolate and butter in microwave or double boiler.  Add eggs, vanilla, sugar, and beat. Add baking mix and combine.  Add nuts or chocolate chips if you desire.  Bake in a lightly greased 8-inch square pan for 20 to 25 minutes, done when a toothpick inserted comes out with crumbs.
